Rainforest Dark Unsweetened Chocolate is ready to eat. Made with the best Equatorial rainforest grown cocoa beans ground to a smooth texture.

The ingredient is simply pure cocoa mass with nothing more added, it really is 100% premium fine ground cacao.

There is no added sugar in our unsweetened couverture chocolate.

Dark Chocolate Unsweetened Chocolate Ingredients: Chocolate Liquor (also known as cocoa mass, 100% cocoa solids - does not contain alcohol this is a FDA techinical term: Chocolate Liquor). KOSHER CERTIFIED CHOCOLATE

Santa Barbara Chocolate Unsweetened Dark Chocolate recipes:

Dark Chocolate Fondue: 8 oz. unsweetened cacao chocolate + 4 oz. milk or dairy free rice milk + pinch of cinnamon.Mix and heat at medium temperature, stirring constantly. Dip your favorite fruit or nuts.

Dark Chocolate Truffle Ganache Vegan Friendly: 8 oz. unsweetened cacao chocolate + 4 oz. coconut cream + 1 tbsp. agave syrup. Mix and heat at medium temperature, stirring constantly, Once mixed well refrigerate to set. Once set use a spoon to scoop and ball ganache into truffles. Roll them in chopped nuts or our Red Cocoa Powder.

You can also use our Unsweetened Cacao Chocolate as a substitute for any unsweetened chocolate baking recipe. Use a 1:1 ratio by weight for the recipe.

How many medallions or coins are in 1 ounce of the 100% dark chocolate? These coins vary so the numbers below are approximate.

16oz x 22lb = 352 ounces = 352 (1 ounce servings)
1.5 grams per coin = 18.6 coins per 1 ounce serving
18.6 coins per 1 oz x 352 ounces total = 6,571 coins per 22lb box

    I've purchased bulk unsweetened chocolate from other companies. By comparison, Santa Barbara's has such a smooth texture and an almost buttery/nutty finish. It was a pleasant surprise.

    I have been purchasing chocolate for baking from Santa Barbara for years now. I consider it the best and use nothing else. I have lost count of all the times my baked goods have been breathlessly exclaimed about due to this chocolate!

    I really like the medallions - they are perfect for cooking (no chopping from blocks!) and, of course, I really appreciate that nothing else is added.

    I use these chocolate medallions to make my own 100% dark chocolate concoction because I don't want refined sugar or other "strange" ingredients in my chocolate. I simply gently melt them in a sauce pan and add raw honey, or agave to taste, a little cinnamon, and sometimes put in some coconut oil and/or organic hulled hemp seeds. Mix it all up, put it in a pyrex dish and then into the frig for it to harden. Break it up into pieces and voila! Delicious 100% dark chocolate!

    I have been buying this chocolate exclusively for years for all my baking needs. I constantly get compliments on it.

    As the saying goes in cooking, "It's the ingredients, stupid!" Or something like that. ;-)

    But seriously, if you are going to use chocolate in a recipe then this is the ingredient you want.

I will always use your company for our chocolate needs. ‚ÄčI am a diabetic and dark chocolate (100% cacao) seems to help me a lot both with the diabetes and my high blood pressure. Nice to know I now have a place to go to for quality chocolate.

    I use this chocolate to blend with 60or 64% to create a 72%
    I have been using the Ecuadoran 100% but think this is even
    creamier. Very good texture and flavor

    Probably the best chocolate unsweetened baking chocolate I have ever had in my life. But it took a week for me to get my order. Yes they emailed me saying things were delayed and gave me some free mugs and chocolate bars but I really wanted my order to arrive overnight. I paid only $9 for shipping so I guess I shouldn't be so picky.

    These medallions can be eaten as they are or, if you want to spice them up, they are easily melted. I put in some raw honey or agave as sweetener, a bit of coconut oil and, sometimes, raw hulled hemp seeds to add some crunch. Pop this is a baking dish and put in the frig. A VERY HEALTHY alternative to white sugar filled chocolate on the market.

    The Unsweetened Chocolate 100% Premium Cacao Medallions are great all around. I use them more for a snack. With this quality of chocolate, it doesn't take a lot to provide a "chocolate fix". A little goes a long ways. When you eat these, you know you have had chocolate.

    I put a few of these in a plastic bag and throw them in my purse when I'm going to be gone all day. One or two make a great snack and keep me away from other things. I don't tend to overeat them, like I would sweet chocolate.
