Santa Barbara Chocolate uses a unique lot numbering system assigned to each ingredient reception linking our vendor’s own batch number to all our manufacturing steps through each of the deliveries to customers. The system is totally managed by SAP and is BRC certified.
Traceability is part of the food safety risk management system e.g. through increased effectiveness of recall, but could also be used for other purposes such as refund justification or to demonstrate authenticity of product information such as origin declarations for certain cocoa and chocolate products.
Mock recall exercises are performed a minimum of three times per year in each of Santa Barbara Chocolate’s sites. The exercise shall not exceed four hours to complete and shall reconcile 99.5-105% of identified product, ingredient or primary packaging. A full review can be completed on site.
