Not only is this recipe one you can make within in minutes, but it’s also using simple, healthy ingredients you might be surprised by. The star ingredient is actually avocado! Even though this sounds a bit odd, once seeing how the meat from the avocado transforms this recipe into its thick and creamy consistency, you will be convinced. Thanks to the avocado, not only is this a healthy treat, but it is also extremely decadent! You know those desperate times where you need to whip up a treat that is suitable for others with certain diets or allergies and you are short on time? If so, this is going to be one of those recipes you keep in your back pocket for those kinds of desperate times.

Since the avocado is a source of healthy fats, this makes this mousse recipe much lower in carbs compared to most traditional recipes!

You know when your avocados are past the point of serving fresh and you wish there was something you could turn them into since you waited forever for them to ripen?? Well, this is your solution for those dark times! Since it is being blended up with other ingredients, especially the rich flavors of cacao from the Santa Barbara Co. hot chocolate, the taste of over-ripe avocado is completely masked!

I personally like to sometimes switch my morning smoothie for this mousse and I also blend in a scoop of chocolate protein powder! This basically tastes as if I’m enjoying dessert for breakfast, but also helps to keep me feeling full until lunch time thanks to the healthy fats from the avocado plus the extra kick of protein from the protein powder! How’s that for the breakfast of champions!?

If being healthy + diet-friendly weren’t enough, its time friendly too! The method of making this sweet treat is as simple as just adding most of the ingredients to a high-speed blender, serving it into jars and then topping off with coconut whip cream, cacao nibs and fresh raspberries. Yes, it’s that easy! Making this is a great recipe to create for those who are either new to cooking or don’t typically enjoy to!

Avocado Chocolate Mousse

Ready in: 20 minutes

Serves: 3 people

Ingredients

  • 1 medium avocado
  • ⅓ cup coconut milk (the thick part from a can)
  • ½ cup coconut whipped cream
  • ¼ cup maple syrup
  • ⅓ cup Santa Barbara hot chocolate
  • 1 tsp vanilla extract (optional)
  • Pinch of salt
  • Sprinkle with Santa Barbara cacao nibs and Fresh raspberries

Preparation

  1. Start by adding the ingredients in order to a food blender.
  2. Mix all ingredients in the food blender for 5-7 min starting low and then switch to higher speed.
  3. Pour the mixture in 3 jars.
  4. Add coconut whipped cream.
  5. Sprinkle Santa Barbara cacao nibs.
  6. Add fresh fruit .
  7. Enjoy right away or later.
