Guilt-Free Cookies Made Easy

Guilt-Free Cookies Made Easy

Published by Chocolatier Jason Vishnefske on 3rd Sep 2022

This is by far the easiest and best-tasting gluten-free, dairy-free, and egg-free chocolate chip cookie recipe around. Crispy with a touch of crunch, these cookies come together in just a few minutes. Since there are no raw eggs, you can even enjoy the dough while baking them. This is our first choice for a cookie due to ease of preparation, excellent texture, and full-bodied flavor—you’ll never miss the eggs or gluten!

Ingredients:

In a bowl, combine:

  • In a bowl, combine:

  • 2 cups rolled oats

  • 1 1/2 cups almond flour

  • 1 cup dark brown sugar

  • 1 teaspoon vanilla flavor

  • 1/2 teaspoon salt

  • 1 teaspoon cinnamon

  • 1 cup organic virgin coconut oil

Pour over all ingredients in the bowl:

  • 1 teaspoon baking soda dissolved in 1/4 cup boiling water

Add:

  • 1 1/2 cups King of The Belgians Dark Chocolate

  • Use your hands to mix all ingredients thoroughly, pressing everything into a paste.

  • Spoon onto parchment paper on a baking sheet.

  • Bake at 350°F for 12 minutes.

  • Yields approximately 2 1/2 dozen cookies.

  • Why These Cookies Stand Out

Why These Cookies Stand Out

These cookies add their own distinct flavor and texture, making them more than just a substitute for conventional recipes. Almond flour offers a rich, nutty base that complements the depth of dark chocolate. In addition to adding a delightful chewiness, coconut oil keeps rolled oats crisp on the outside and tender on the inside.

The use of high-quality dark chocolate takes these cookies to the next level. Instead of using overly sweet chocolate chips, the King of The Belgians Dark Chocolate adds a rich cocoa intensity, balancing the sweetness of the brown sugar. The result is a treat that feels substantial without being overly heavy.

A Sweet Treat with Simple Ingredients

This recipe's simplicity is one of its best features. Every ingredient has a distinct function and adds to the texture and flavor. These cookies are made with healthy ingredients that you probably already have in your kitchen, unlike store-bought ones that are packed with fillers and preservatives.

This recipe is a great option for people with dietary restrictions or anyone searching for a lighter version of classic cookies because it doesn't include dairy or eggs. Coconut oil keeps the cookies soft without sacrificing structure, making it the ideal substitute for butter.

Serving Suggestions

  • Enjoy Freshly Baked: These cookies are perfect right out of the oven when the chocolate is still melty and the edges have just the right amount of crunch.

  • Pair with a Beverage: Try them with a warm cup of tea, coffee, or a glass of almond milk for a satisfying snack.

  • Turn Them into Ice Cream Sandwiches: Let the cookies cool, then sandwich them with your favorite dairy-free ice cream for a homemade frozen treat.

  • Crumbled as a Topping: Break a cookie over a bowl of oatmeal, yogurt, or smoothie for added texture and chocolate goodness.

Storing and Freezing

The cookies keep well in an airtight container for up to a week if you don't intend to eat them all at once, even though it's tempting to do so. Transfer the cookie dough to a freezer-safe bag after freezing it in portioned scoops on a baking sheet for extended storage. Add a minute or two to the baking time when baking from frozen.

A Recipe Worth Repeating

Whether you’re baking for a gathering or simply treating yourself, these cookies offer a combination of crunch, chewiness, and deep chocolate flavor. They come together quickly with minimal effort, making them a great go-to recipe for any occasion.
