Directions

Orange Sheet Cake Directions

  1. Mix flour, baking powder and salt.
  2. Mix butter and sugar together in mixer with paddle attachment until light and fluffy.
  3. Add eggs slowly, scraping the edges as it is added.
  4. Mix in half of the dry ingredients, followed by half of the liquid ingredients. Repeat and do not over-mix.
  5. Spread the cake batter into 1/2 sheet tray and a 1/4 sheet tray. Bake at 325F until the cake springs back to the touch. Allow to cool before cutting.

Napa Ganache Directions

  1. Bring the heavy cream and orange juice to a boil.
  2. Pour hot mixture over the dark chocolate. Allow to sit for 1 minute before emulsifying.
  3. Use this ganache for layers between the orange sheet cake. Build the layers in a mold and allow to freeze before un-molding. Serve with grape compote.

Grape Compote Directions

  1. Bring orange juice, lemon juice, vanilla extract, granulated sugar, grape juice and 110g of fresh red grapes to a boil; reduce to simmer. Allow to simmer for 15 minutes and then add the rest of the fresh red grapes.
  2. Mix a little bit of the liquid from this mixture into the cornstarch to make a slurry.
  3. Add the slurry to the hot mixture and stir until thickened.
  4. If needed cook a little more until grapes are softened.
