Fresh Lime Juice:

Glucose Syrup:

35g

Butter:

White Chocolate:

905g

Limoncello Liquor:

45g

Lime Zest:

Zest each lime used for juicing

Directions

  1. Temper and mold white chocolate into preferred shells. This white chocolate is not part of the ingredient listing above.
  2. Mix lime juice, glucose and butter into a pot and bring to light boil.
  3. Mix white chocolate and lime zest, then pour boiling lime juice, glucose and butter over it.
  4. Emulsify the ingredients and cool down ganache to 84°F.
  5. Pipe into pre-made white chocolate shells, and let sit overnight.
  6. Close the shells with more tempered white chocolate.
