Organic Chocolate Couverture and Bulk Organic Chocolate

Our organic chocolate is truly organic certified. In most cocoa farming the pods are picked from the trees and allowed to fall on the ground where they are then cut open and scooped into a container to be taken to another location for fermentation (sometimes right under the trees on the ground).

The organic pods we use are picked fresh and ripe, added to an organic approved bin, taken to a sort location and then washed and cut open for fermentation. This adds a big measure of food handling safety and cleanliness.

Most chocolate companies might skip processes like washing pods or making sure the pods don't ever touch the ground. Skipping these steps increases possible risk in sanitation issues. Those extra steps do add to the cost and cut down on cacao yield but we think it is worth it. We feel good knowing we are really selling true organic chocolate.
