Chocolate Carrot Cake without Flour

This delightful cake is a lovely combination of rich chocolate, earthy carrots, nutty oats, and sweetness. The absence of traditional flour makes it denser and more moist than a typical cake. Recipe Ingredients: 

egg: 3 

sweetener to taste (optional 4 TBSP sugar) 

Rainforest Dark Vegan Cacao Powder: 2 TBSP https://www.santabarbarachocolate.com/vegan-cocoa...

carrots: 8 oz 

oat flakes: 3.5 oz 

leavening agent: 1 TSP

Method of preparation: 

Grind oat flakes into flour. 

Shred carrots in a blender or grate on a fine grater. 

Add sweetener to eggs, beat with a whisk. 

Add carrots, oats, Rainforest Dark Vegan Cacao Powder and baking powder, mix thoroughly. 

Transfer the gluten free batter into a mold, bake at 350 F for 30 minutes.

Sprinkle Organic Dark Chocolate with coconut palm sugar @santabarbarachocolate (https://www.santabarbarachocolate.com/organic-dark-chocolate-coconut-palm-sugar-sweetened/) and garnish with berries (optional).
