Cocoa powders are measured by several factors to determine quality, flavor and how the cocoa might work in a recipe. The basic factors that determine the cocoa specifications are: alkalization level, color of the cocoa, cocoa butter fat content, sweetened or not and if it has added lecithin emulsifier.
Unsweetened Organic Cocoa Powder Features:
1) Alkalized raw cacao has a darker red color and alkaline PH with lower acidity and therefore no reactivity to baking powder.
2) The red hue of the cocoa is due to the blended cacao variety and alkalization process.
3) Cocoa (cocoa cake) is pressed to 10-12% cocoa butter fat content which offers a lower fat and more intense flavor in drinks.
4) Made without added sugar or lecithin emulsifier.
