Santa Barbara Chocolate Ruby Couverture is made with prized cocoa beans. Certified Ruby Cocoa can come from equatorial Africa or South America in several quality grades with variation in flavor depending on where they are grown and the methods used. We've selected the most rare Ruby cacao pods considered to be closer to the original heirloom cacao for their cleaner and fresher flavors.

Blossoming Ruby pod trees grow near flowing rivers where they flourish in concert with the indigenous animals of the tropical rainforest ecosystem.

Ruby Couverture has a flavor that is intriguing and hard to describe. It's unlike anything you have ever had before: flavors of ripe berry followed by milk notes, raw unfiltered cocoa butter taste and unsweetened cocoa finish, it is a true delicacy.
