Unsweetened Cocoa Powder by Santa Barbara Chocolate is red color, natural process and high fat 22/24 cocoa butter. Packed bulk in an industrial 50lb. sack.

Unsweetened Cocoa powders are measured by several factors to determine quality, flavor and how the cocoa might work in a recipe. The basic factors that determine the cocoa specifications are: natural or alkalization level, color of the cocoa, cocoa butter fat, sweetened or not and if it has added lecithin emulsifier.

Unsweetened Cocoa Powder Features:

1) Natural raw cacao has a red color with a more alkaline PH and lower acidity - therefore no reactivity to baking powder.

2) The reddish hue of the cocoa is due to the blended cacao.

3) Cocoa (cocoa cake) is pressed to 22-24% cocoa butter fat content which offers a full flavor and more rich mouthfeel in drinks.

4) Made without added sugar or lecithin emulsifier. This is Natural Cocoa.
